All I’ve been hearing for the last couple of weeks is talk about Starbucks and their brand new Pumpkin Spice Cold Brew coffee. Although I haven’t had this new drink yet, I’ve always been a huge fan of their Pumpkin Spice Lattes.
But if I’m completely honest with you, I haven’t had one in years! When we moved to Miami I got hooked on Cuban coffee and I’ve never turned back. Whenever I crave a latte, I make it at home with my Cuban brew and all is right with the world. So I decided to put myself to the test and see if I could create a copycat version of this infamous Pumpkin Spice Cold Brew. Minus the preservatives and artificial ingredients!
My version is completely organic and has real pumpkin.
Who wants to spend $5 on a drink when you can make it for FREE at home?! I don’t particularly always feel this way in life, but when it comes to food and drinks — I do!
Let me just say, I was extremely happy with the outcome of my copycat Pumpkin Spice Cold Brew!
Now, you can start this little endeavor off one of two ways:
You can make your own cold brew (which needs to be made the day before) or you can make life super simple and buy it at the grocery store. Whole Foods has about ten different kinds to choose from! Next, all you’ve got to do is make the pumpkin spice cream. Which I could literally drink all by itself. Y-U-M! Once your cold brew coffee is made (or bought), this coffee takes all of about 5 minutes to make.
Serve this Pumpkin Spice Cold Brew for breakfast, brunch, or a little pick-me-up in the afternoon. You’re going to love it!

- 1 cup milk (dairy or nondairy)
- 1/4 - 1/2 cup coconut sugar or cane sugar
- 1 tbsp pumpkin puree (NOT pumpkin pie filling)
- 1 tsp pumpkin pie spice
- 2 tsp vanilla extract
- 8 oz cold brew coffee (homemade or store bought)
- 2 - 4 oz pumpkin cream
- In a small saucepan over medium low heat, add the milk, sugar, pumpkin, and pumpkin pie spice. Whisk together until the sugar melts. Don't let this boil. Take it off the heat and add the vanilla.
- Pour the cold brew coffee into a glass filled with ice.
- Top with desired amount of pumpkin cream.
- DRINK and be HAPPY!
- The Pumpkin Cream makes about 1 1/4 cup.
- Refrigerate leftovers.
