Pi Day
Happy Pi Day! An annual celebration of mathematical proportions, or rather one mathematical constant. In honor of Pi Day, we are sharing an easy recipe for Coconut Key Lime Pie.

In my opinion Key Lime Pie is as Floridian as desserts go, and adding the coconut gives it what I feel is a Miami flare.
This pie comes with a whole vibe when you try it. This pie tastes like… lounging by the water at a beach resort while sipping on a frozen drink with an umbrella in it.
A girl can dream.
But while I wait for that dream to come to fruition, let’s bake some pie, shall we?!
Tips
- Publix sells bottled key lime juice. No squeezing necessary! However, if you can’t find any you can sub for 1/2 lime juice 1/2 lemon juice.
- Want to make a pina colada pie? Add some pineapple juice to this recipe.
- Make it dairy-free by replacing regular condensed milk with condensed coconut milk.
- If you want to make your own crust, crumble up a pack of graham crackers in the food processor. Add half a stick of melted butter (or margarine), and then mold into the bottom and side of a pie pan. Then bake for about 8 minutes at 350 F.
- Want to make your own whipped cream? Use a small carton of heavy whipping cream, add some confectioners sugar and mix until it becomes whipped cream consistency.
Coconut Key Lime Pie
Equipment
- 1 Whisk (or Mixer)
- 1 Medium mixing bowl
Ingredients
- 4 egg yolks
- 1/2 cup key lime juice
- 1 can sweetened condensed milk (14 oz)
- 1 can cream of coconut
- 1/2 can 9 inch graham cracker crust (15oz)
- whipped topping
- shredded coconut
Instructions
- Pre-heat oven to 350°F
- Mix egg yolks, condensed milk, cream of coconut, and key lime juice until smooth.
- Pour mixture into pie crust.
- Bake at 350° for 15 minutes.
- Cool for at least 3 hours before serving.
- Add whipped topping and shredded coconut before serving.
