Are you thinking of a healthy veggie option for your kids’ lunch boxes? These cauliflower and broccoli fritters are nutritious, irresistible and ready in 30 minutes! Your kids will gobble them up, and you’ll feel good knowing that they’re putting something healthy and satisfying into their growing bodies.  

Cauliflower & Broccoli Fritters

Total prep time: 30 minutes

Ingredients:

1 onion
2 carrots
1 cup of cauliflower
1 cup of broccoli
4 eggs
4 oz bread crumbs
1 Tbsp spoon of honey
2 Tbsp of parsley
5 oz of parmesan cheese
salt and pepper

Directions:

Spray a cookie sheet or sheet pan with nonstick cooking spray and set aside. In a food processor, chop the onion, carrots, cauliflower, and broccoli. Once everything looks like rice, transfer the chopped ingredients to a bowl. Add salt and pepper, eggs, parsley, honey, and parmesan cheese and mix together.  As the ingredients become a thick paste, form the mixture into patties. Place the patties on the prepared cookie sheet and bake in the oven 425 degrees oven for 10-13 minutes.

These fritters are delicious on their own as a healthy snack or as an appetizer.  Enjoy!
