Summer is here and I don’t know about you but I always forget what good veggies are in season. Not all of these veggies are grown here in Florida but they are available in your local grocery store. Summers are really hot here so it’s hard to harvest most vegetables.

I have put a list together of my favorite summer veggies:

  • Bell Peppers
  • Sweet Corn
  • Tomatoes
  • Eggplant
  • Mushrooms
  • Avocados 

How to Cook your Summer Veggies

You can cook your veggies in three different ways. 

  1. On the grill – Bell peppers are my absolute favorite on the grill. I cut the peppers in half, removing the seeds. I drizzle them with olive oil and season with salt and pepper. Place on the grill on a medium/high heat and cook for 3-4 minutes on each side or until you see a slight char. Once they have a dark coloring (almost burnt like) remove and peel the skin. Once you do this, they are ready to be served. You can also make some shish kabobs on the grill. Season the same and place on the grill at a medium to high heat and rotate every 4-5 minutes until it is fully cooked. 
  2. Oven – You can bake or broil your veggies in the oven. You can slice or chop however you prefer. Pre-heat oven to 400 degrees and place veggies on a baking sheet. Layer the veggies evenly so that they cook evenly and cook for 15-20 minutes. 
  3. Stove Top – This is more time consuming but you can toss them in a pan over medium to low heat with a little olive oil or butter/ghee. Season with salt and pepper and cook until you get the desired consistency. 

Enjoy your summer veggies by the pool or a picnic outside with the family. 

BONUS: If you have an air-fryer you can make your veggies in there too.
