Don’t know what to make for dinner tonight? I have the answer! Instant Pot savory flanken short ribs! I haven’t actually thought of an official name for these yet actually (so feel free to drop any suggestions in the comments).

Thank you once again Instant Pot!

I added this to my dinner repertoire and categorized it under “meals I can make in advance on days we have 4 hours of after school activities,” like I have with all my Instant Pot meals.

But I also put this one under “fancy things I can make to impress the in-laws.”

At first I didn’t even know where to find flanken ribs. Honestly, until recently I didn’t even know what flanken ribs were. Turns out you can get them at Publix. And if they don’t have them out ask the butcher, they can cut them for you.

A bowl of herbs and spices for the rub

This recipe takes 10 minutes of pre-heating and then 40 min of IP cooking. With preheating and venting it’s about an hour total. But like with all IP recipes, while it cooks we can do everything else.

I usually make some rice and put the ribs on top. I actually serve this in a bowl because we love to add lots of the seasoned rib au jus to the rice.

These ribs come out so tender they will fall apart as you try to take them out of the pot.

Another great thing about this recipe is it’s versatility. The kids don’t like spice? Eliminate the mustard powder. Want more spice? Add a 1/4 teaspoon of chipotle or cayenne powder.

As the name says these ribs are sweet but not overly sweet. It is just enough to balance out the rest of the spices, they are actually more savory than sweet.

This is a great recipe when you want the smokey BBQ feel without having to clean the grill afterwards.

Enjoy!
