Pecan Blondies: A perfect dessert to indulge in before you start those New Year resolutions!
Happy New Year! I don’t know about you, but I’m still in shock that it’s actually 2020. YIKES! Shocked and super excited all at the same time. My husband and I have been talking nonstop about our goals for this year and I have to say, I’m pretty pumped!
I know most people like to start the new year off with healthy eating and a whole lot of exercise. I’m definitely one of these people, too. BUT…before I cut sugar and carbs completely out of my diet for the next few weeks, I’m finishing off one of my favorite desserts!
My mom sent us a huge box full of presents for Gaby and lots of homemade southern holiday snacks for me and Omar for Christmas. From peanut butter filled ritz crackers dipped in white chocolate to spicy homemade chex mix… candied pecans and our all time favorite Christmas dessert ever: Pecan Blondies.
Maybe you’ve heard of pecan blondies before, perhaps you haven’t. All I can say is this: You can’t just have one. There’s absolutely nothing better than eating a couple of these bad boys for breakfast with a hot cup of coffee. It’s seriously the best, most unhealthy breakfast ever I only allow myself to eat once a year!
If I had to describe what these taste like, I would say a blonde brownie packed full of pecans, butter and brown sugar. Dusted in just a bit of powdered sugar because it makes them look really pretty! I won’t lie, they’re pretty sweet, but the coffee balances these out perfectly!

- 1 1/4 sticks butter
- 2 1/2 cups brown sugar, packed
- 1 3/4 cup all purpose flour
- 2 large eggs
- 3 tsp baking powder
- 2 tsp vanilla extract
- 1 cup chopped pecans
- Preheat the oven to 350 degrees. Grease a 8x11 inch baking pan; set aside.
- Melt the butter and brown sugar in a double boiler.
- Mix the flour, eggs, baking powder, vanilla, and pecans together. Add the butter mixture once melted.
- Pour the batter into your prepared pan and bake for 35-40 minutes.
- Let cool completely and cut into squares. I like to cut my squares into bite size pieces.
- Optional: dust these Indians in powdered sugar to make them look pretty! But totally not necessary.
- Serve with coffee and ENJOY!
- Store in an airtight container and keep for 4 - 5 days.
