Braised Oxtail: The Best Comfort Food You’ll Ever Try

If you want to impress your family this week, this recipe for oxtail is for you! This recipe is downright the best comfort food you’ll ever try! Don’t be intimidated by this rare cut of the cow. I promise it is as simple as making any kind of stew.

I’m going to be honest, I measure everything “a ojo” or “eyeballing it,” but I did my best to give you the measurements as close as possible to what I use.
 
First off, you have to get yourself a pressure cooker. It doesn’t matter if it’s electric or a regular stovetop pressure cooker. This tool is essential if you want the “fall off the bone” oxtail experience.
 
No pressure cooker? No problem! This recipe will also work with a slow cooker, it just won’t be done as quickly.

You’ll need these ingredients:

3 lbs oxtails
1 cup red wine or red cooking wine
1/4 cup olive oil
1 can tomato sauce
1 whole onion
1 whole garlic head
1/2 red bell pepper
Salt and pepper to taste
Thyme (optional)

Make it happen:

– Blend the oil, onion, red bell pepper, and garlic in the blender, then put the mixture in the pot on medium heat.
– Add the wine and tomato sauce, salt, and pepper.
– Place the oxtails in the liquid mixture with the bones showing. If you have to place some tails on top of the others because they don’t fit at the bottom of the pot, it’s fine, it will cook just fine if it’s not covered in sauce. 
– Sprinkle a little extra garlic powder and thyme if you like for an extra yummy taste.
-Close that sucker and cook for an hour on med-low heat for 30 minutes.
